Vinification: The grapes are hand harvested and placed in a stainless steel open top fermenter. Fermentation occurs spontaneously over 10 days with native yeast. The wine is gently pressed and then aged for 8 months in oak barrels and stainless steel. Unfined & Unfiltered.
