Grapes: Pinot Noir and Chardonnay
What's It Like? Delicate bubbles with a dry finish and just a little bit of funk.
Vinification: Grapes were handpicked, whole cluster pressed, and the juice was hyperoxidized. After settling, the juice was racked off to amphorae where fermentation began spontaneously. Each amphora was co-fermented with a blend of Pinot Noir (66%) and Chardonnay (34%). As primary fermentation was finishing, the wine was racked off of fine lees and chilled to halt fermentation. Just prior to bottling, the wine was mixed to homogenize extra fine lees and warmed to encourage the completion of primary in bottle.
