Wild Ale w/ Pinot Noir Grape Skins
This is the third year we’ll be releasing a version of this beer. When we make wine hybrid beers, we typically open-ferment the wine on the skins with about 25% whole clusters. After an initial fermentation, we press the must (juice) off of the pomace (stems, seeds, skins), and use each for different beers. Year 1 was Malbec, Year 2 was Petite Syrah and this year we’re releasing Moon Water ‘Pinot Noir’!
This is the most vinous version of Moon Water we’ve released. It’s clean-drinking with low tannin and lots of juicy red fruit, plum and subtle baking spice character. All of that will make sense to you wine drinkers out there.
